Similar to how Iowa is known as the “The Hawkeye State”, Michoacán is known as “The Soul of Mexico”. Home to the heart of an ancient empire that directly rivaled the Aztecs, the people of the coastal state of Michoacán have a unique heritage of combining seafood with agriculture. Fabian and Luis, drawing upon this rich heritage, have adapted rare recipes to Carlisle’s local ingredients to offer clients truly unique culinary experiences not seen in Mexico or anywhere else in the USA.
